Ingredients
  

  • 1 lb boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 1 cup sliced mushrooms
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and garlic for 3 minutes until fragrant.
  3. Add chicken thighs and sear for 4–5 minutes per side until golden brown.
  4. Stir in carrots, celery, and mushrooms, cooking for another 4 minutes.
  5. Pour in chicken broth and heavy cream, then add thyme, rosemary, salt, and pepper. Stir to combine.
  6. Bring to a gentle simmer for 2 minutes.
  7. Transfer skillet to the oven and bake for 20–25 minutes until chicken is fully cooked.
  8. Remove from oven, let rest for a few minutes, and garnish with fresh parsley before serving.

Notes

Substitute chicken thighs with chicken breasts for a leaner option.
Adjust seasoning to taste.
Serve with mashed potatoes, crusty bread, or steamed vegetables.
