Ingredients
  

For the Grilled Nectarines
  • 2 nectarines Halved and pitted
  • 1 tablespoon olive oil Or melted coconut oil
  • 1 teaspoon brown sugar Optional, for extra caramelization
  • Pinch cinnamon
For Assembly
  • 1 cup plain Greek yogurt Full fat or low-fat
  • 1/2 cup granola Your favorite variety
  • 1 tablespoon honey or maple syrup For drizzling
  • 2 teaspoons chopped pecans or walnuts For garnish

Method
 

Instructions
  1. Prepare the grill for medium-high heat. Lightly brush the cut sides of the nectarine halves with olive oil and sprinkle evenly with brown sugar (if using) and cinnamon.
  2. Place the nectarine halves cut-side down on the hot grill grates. Grill for 4 to 5 minutes without moving them, allowing deep grill marks to form and the sugars to caramelize.
  3. Flip the nectarines gently and grill for another 3 to 4 minutes until they are tender but still hold their shape. Remove from the grill and set aside to cool slightly.
  4. To assemble the dish, spoon half of the Greek yogurt into the bottom of two serving bowls or glasses.
  5. Top the yogurt layer generously with half of the granola in each bowl.
  6. Slice the grilled nectarine halves into thick wedges and arrange them artfully over the granola layer.
  7. Drizzle with honey or maple syrup and garnish with chopped pecans or walnuts before serving immediately.

Notes

Grilling brings out the natural sweetness of the nectarines. If you don't have a grill, you can achieve similar results by using a cast iron grill pan over medium-high heat.
