- Prepare the Lobster Tails: If using frozen lobster tails, thaw them completely in the refrigerator overnight or by submerging them in cold water for 30 minutes. Using kitchen shears, carefully cut down the center of the hard top shell of each lobster tail, from the wide end to the base of the tail, being careful not to cut through the meat or the bottom shell. Gently open the shell and separate the meat from the shell, leaving it attached only at the very end of the tail. Lift the meat out and rest it on top of the shell, creating a "piggyback" style presentation. Score the top of the lobster meat lightly down the center if desired to allow more butter to penetrate and for even cooking.2 large lobster tails
- Preheat the Grill: Preheat your grill to medium-high heat (375-400°F or 190-200°C). If using a gas grill, make sure the grates are clean. For a charcoal grill, arrange coals for direct heat.
- Prepare the Garlic Butter: In a small microwave-safe bowl, combine the melted butter, minced garlic, fresh parsley, lemon juice, smoked paprika, salt, and black pepper. - Baste the Lobster: Place the prepared lobster tails, meat-side up, on a baking sheet or platter. Brush a generous amount of the garlic butter mixture evenly over the exposed lobster meat. Reserve some butter for basting during grilling and for serving.2 large lobster tails
- Grill the Lobster: Carefully place the lobster tails, shell-side down, directly on the preheated grill grates. Grill for 5-7 minutes, depending on the thickness of the tails. During this time, the shell will turn vibrant red, and the meat will begin to turn opaque.2 large lobster tails
- Flip and Finish: Using tongs, carefully flip the lobster tails meat-side down for 2-3 minutes. This helps get some grill marks and ensures even cooking. Flip them back shell-side down. Continue to baste the meat with the reserved garlic butter throughout the grilling process.2 large lobster tails
- Check for Doneness: The lobster is cooked when the meat is opaque white and firm to the touch. An internal temperature of 140-145°F (60-63°C) is ideal. Be careful not to overcook, as this can make the lobster tough.2 large lobster tails
