- Add the prepared shrimp, sea scallops, calamari rings (or fish chunks), red bell pepper chunks, yellow bell pepper chunks, red onion chunks, and cherry tomatoes to the bowl with the marinade. Gently toss everything to ensure all ingredients are evenly coated. - Thread the marinated seafood and vegetables onto the prepared skewers, alternating the ingredients for a visually appealing presentation. Aim for a mix of seafood and vegetables on each skewer. Don't overcrowd the skewers; leave a small space between each piece to ensure even cooking.
- Preheat your grill to medium-high heat (around 400°F or 200°C). Ensure the grill grates are clean and lightly oiled to prevent sticking.
- Place the assembled Grilled Seafood Skewers onto the preheated grill. Grill for approximately 3-5 minutes per side, or until the shrimp are pink and opaque, the scallops are firm and slightly golden, the calamari is cooked through and tender, and the vegetables are tender-crisp with desirable grill marks. The exact grilling time will depend on the size of your seafood and the heat of your grill.
- Carefully remove the Grilled Seafood Skewers from the grill. Serve immediately, perhaps with a squeeze of fresh lemon and your favorite side dishes like rice, a fresh salad, or grilled corn.
Notes
Wooden skewers need to be soaked in water for at least 30 minutes before use to prevent burning.
