  • 1/4 cup mayonnaise

  • 4 cups cooked rice (brown or white), quinoa, or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese or goat cheese, crumbled
  • 1/4 cup fresh parsley or cilantro, chopped

Method
 

  1. In a bowl, whisk together olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the flank steak or sirloin steak to the marinade, ensuring it's fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours, for optimal flavor.

  3. Preheat your grill to medium-high heat. Remove the steak from the marinade, letting any excess drip off. Grill the steak for 4-6 minutes per side for medium-rare, or adjust cooking time to your desired doneness. Allow the steak to rest on a cutting board for 5-10 minutes before slicing.

  5. Thinly slice the rested steak against the grain. Arrange the sliced steak over the base in each bowl.
