Ingredients

  • 2 ¾ cups All-Purpose Flour sifted
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 cup Unsalted Butter softened
  • 1 ½ cups Granulated Sugar
  • 2 Large Eggs at room temperature
  • 1 teaspoon Vanilla Extract
  • 1-2 teaspoons Green Gel Food Coloring (or liquid)
  • ½ cup Powdered Sugar (Confectioners' Sugar), for rolling

Equipment

  • Large mixing bowls
  • Electric Mixer (stand or hand)
  • Whisk
  • Sifter
  • Rubber spatula
  • Measuring cups and spoons
  • Cookie Scoop (1.5 tbsp)
  • Shallow Bowl (for powdered sugar)
  • - Parchment Paper
  • Baking Sheets
  • Wire cooling rack

Method

  1. Prepare Your Dry Ingredients: In a medium bowl, whisk together the sifted all-purpose flour, baking powder, and salt. Set aside.
    2 ¾ cups All-Purpose Flour, 1 teaspoon Baking Powder, ½ teaspoon Salt
  2. Cream Butter and Sugar: In a large mixing bowl, using an electric mixer, cream the softened unsalted butter and granulated sugar together until light and fluffy. This typically takes about 3-5 minutes. Scrape down the sides of the bowl as needed to ensure everything is well combined.
1 cup Unsalted Butter, 1 ½ cups Granulated Sugar
  3. Add Eggs and Vanilla: Beat in the large eggs one at a time, mixing well after each addition until fully incorporated. Stir in the vanilla extract.
2 Large Eggs, 1 teaspoon Vanilla Extract
  4. Add Green Color: Now, it’s time to make them Grinchy! Add 1 teaspoon of green gel food coloring to the wet mixture. Mix until the color is evenly distributed. If you desire a more intense green, add another ½ to 1 teaspoon of food coloring until you reach your preferred shade.
1-2 teaspoons Green Gel Food Coloring
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, mixing on low speed until just combined. Be careful not to overmix; overmixing can lead to tough cookies. The dough will be soft and slightly sticky.
  6. Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour, or up to 2-3 hours. Chilling is crucial for easy handling and for the sugar to properly adhere, creating those beautiful crinkles.
  7. Preheat Oven & Prepare Baking Sheets: While the dough is chilling, preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  8. Prepare Powdered Sugar: Pour the powdered sugar into a shallow bowl.
    ½ cup Powdered Sugar
  9. Scoop and Roll: Once the dough is chilled, take it out of the refrigerator. Using a small cookie scoop (about 1.5 tablespoons) or your hands, roll the dough into 1-inch balls.
  10. Coat in Powdered Sugar: Roll each dough ball generously in the powdered sugar, ensuring it's completely coated. A thick layer of powdered sugar is essential for the crinkle effect.
    ½ cup Powdered Sugar
  11. Arrange on Baking Sheets: Place the coated cookie dough balls about 2 inches apart on the prepared baking sheets.
  12. Bake: Bake for 8-10 minutes, or until the edges are lightly set and the cookies are puffed up with beautiful crinkles, but the centers still look slightly soft. Do not overbake to ensure a soft and chewy texture.
  13. Cool: Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chilling the dough is essential for proper crinkling! Don't skip this step. For an even more vibrant green, you can add a touch more gel food coloring.
