- Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.1 tablespoon olive oil, 1 medium onion, chopped, 2 cloves garlic, minced

- Stir in the taco seasoning mix and ¼ cup of water. Bring to a simmer, then reduce the heat to low, cover, and cook for 5-10 minutes, allowing the flavors to meld and the sauce to thicken slightly. - Stir in the rinsed and drained black beans into the seasoned ground beef mixture. Cook for another 2-3 minutes, stirring occasionally, until the beans are heated through.1 can (15 ounces) black beans, rinsed and drained
- While the beef mixture is simmering, assemble your bowls. Divide the cooked rice between your serving bowls. Top the rice with a generous portion of shredded lettuce.1 cup cooked white rice or brown rice, 1 cup shredded lettuce
- Spoon the seasoned ground beef and black bean mixture over the lettuce in each bowl.
- Sprinkle the shredded cheese over the warm meat mixture. Add a dollop of salsa, and then get creative with your favorite toppings like sour cream, guacamole, chopped cilantro, sliced jalapeños, corn, or pico de gallo.
