Ingredients
  

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 large onion thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 red bell pepper thinly sliced
  • 2 cloves garlic minced
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper plus more to taste
  • 1/4 teaspoon Italian seasoning optional, but recommended
  • 4-6 hoagie rolls or sub rolls split lengthwise
  • 4-6 slices provolone cheese or your favorite cheese (cheddar, Swiss, or a blend work well)

  • sautéed mushrooms

Method
 

  1. Thinly slice the onion and both the green and red bell peppers. For the best results, aim for uniform slices so they cook evenly. Mince the garlic cloves.

  2. Heat the olive oil in a large skillet or frying pan over medium-high heat. Add the ground beef and break it apart with a spoon or spatula. Cook until the beef is browned and no pink remains, about 5-7 minutes. Drain off any excess grease.

  3. Add the sliced onion and bell peppers to the skillet with the browned ground beef. Cook, stirring occasionally, until the vegetables begin to soften and the onions become translucent, about 8-10 minutes.

  4. Stir in the minced garlic, salt, black pepper, and Italian seasoning (if using). Cook for another minute until the garlic is fragrant.

  5. While the vegetables are cooking, you can lightly toast the inside of the hoagie rolls in a toaster, under the broiler, or in a dry skillet. This adds a pleasant crispness and prevents the rolls from getting soggy.

  6. Divide the ground beef and vegetable mixture evenly among the split hoagie rolls. Spoon it generously into each roll.

  7. Place 1-2 slices of provolone cheese (or your chosen cheese) on top of the meat and vegetable filling in each roll.

  8. Broiler Method: Place the assembled cheesesteaks on a baking sheet and broil for 1-3 minutes, watching carefully, until the cheese is melted, bubbly, and slightly golden.
  9. Covered Skillet Method: If you don't want to use the broiler, you can cover the skillet with a lid and let the residual heat melt the cheese for a few minutes. You can also add a tablespoon of water to the skillet before covering to create steam, which helps melt the cheese.
  10. Once the cheese is perfectly melted, add any of your favorite optional toppings like mayonnaise, ketchup, mustard, hot sauce, or pickled jalapeños.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. For longer storage, freeze the filling separately for up to 2-3 months.
