Ingredients

  • 1 cup Graham cracker crumbs finely crushed (about 6-8 full graham crackers)
  • 1/2 cup Protein powder vanilla or unflavored (whey, casein, or plant-based)
  • 1/4 cup Cream cheese softened (light or regular)
  • 1/4 cup Unsweetened applesauce
  • 2 tablespoons Honey or maple syrup adjust to sweetness preference
  • 1/4 cup Freeze-dried blueberries finely crushed or pulsed in a food processor
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Equipment

  • Medium Bowl
  • Food Processor (optional)
  • Plate or baking sheet
  • - Parchment Paper

Method

  1. In a medium bowl, combine the finely crushed graham cracker crumbs, protein powder, and pinch of salt. Whisk everything together until well combined.
1 cup Graham cracker crumbs, 1/2 cup Protein powder, 1 pinch Salt
  2. Add the softened cream cheese, unsweetened applesauce, and honey or maple syrup to the dry ingredients. Stir diligently until a thick, cohesive dough begins to form. You might need to use your hands to fully incorporate everything.
1/4 cup Cream cheese, 1/4 cup Unsweetened applesauce, 2 tablespoons Honey or maple syrup
  3. Gently fold in the finely crushed freeze-dried blueberries and the vanilla extract. Mix until the blue hues are evenly distributed throughout the dough, creating that signature blueberry cheesecake swirl.
1/4 cup Freeze-dried blueberries, 1 teaspoon Vanilla extract
  4. Roll the mixture into small, bite-sized balls, approximately 1 inch in diameter. If the mixture feels too sticky, you can lightly wet your hands or dust them with a tiny bit of protein powder or almond flour.
  5. Place the rolled protein bites onto a plate or baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up, making them easier to handle and enjoy.

Notes
