Ingredients
  

Coleslaw Mix
  • 1 bag (14 oz) shredded coleslaw mix or approximately 4 cups
  • 1 red bell pepper finely diced
  • 1/2 red onion finely diced
  • 1 cup crushed pineapple drained
  • 1/4 cup fresh cilantro chopped
Dressing
  • 1/2 cup mayonnaise full fat recommended
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar or honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Instructions
  1. In a large bowl, combine the shredded coleslaw mix, diced red bell pepper, and diced red onion.
  2. Add the drained crushed pineapple and chopped fresh cilantro to the vegetable mixture.
  3. In a separate medium bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, Dijon mustard, salt, and pepper until well combined and smooth.
  4. Pour the dressing over the coleslaw mixture.
  5. Toss gently until all the ingredients are evenly coated with the dressing.
  6. For best flavor, cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

For a creamier dressing, use additional mayonnaise. You can also add chopped toasted almonds or peanuts for extra crunch.
