Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar (plus more for coating)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon (plus more for coating)
  • 1/4 teaspoon salt
  • 1 cup water
  • 2 tablespoons unsalted butter cubed
  • 1 large egg lightly beaten
  • 1 teaspoon vanilla extract
  • Non-stick cooking spray or a light drizzle of oil for the air fryer basket
  • 1/4 cup granulated sugar for coating
  • 1 tablespoon cinnamon for coating

Method
 

  1. In a medium saucepan, combine the water, butter, 1 tablespoon of sugar, cinnamon, and salt. Heat over medium heat, stirring until the butter is melted and the mixture just begins to simmer.

  2. Remove the saucepan from the heat. Add the flour all at once and stir vigorously with a wooden spoon until a smooth ball of dough forms and pulls away from the sides of the pan.

  3. Let the dough cool for about 5 minutes. This is important so the heat doesn't scramble the egg. Then, beat in the egg and vanilla extract until the dough is smooth and well combined.

  4. In a shallow dish or bowl, mix together about 1/4 cup of granulated sugar and 1 tablespoon of cinnamon. This will be used to coat the churro bites after they’re cooked.

  5. Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with non-stick cooking spray or brush with a tiny bit of oil.

  6. You can either spoon the dough directly into the air fryer basket (forming smaller dollops) or, for a more traditional shape, transfer the dough to a piping bag fitted with a large star tip and pipe small churro shapes. If spooning, aim for about 1-inch mounds.
  7. Carefully place the churro bites in the preheated air fryer basket in a single layer, ensuring they don't touch. You may need to cook in batches.
  8. Air fry for 8-10 minutes, or until the churro bites are puffed up and golden brown. The exact time will depend on your air fryer and the size of your bites.
  9. While the churro bites are still warm, gently toss them in the prepared cinnamon-sugar mixture until evenly coated.
