- Preheat your oven to 400°F (200°C). Select a medium-sized oven-safe baking dish.
- Place the block of feta cheese in the center of your baking dish. Arrange the cherry or grape tomatoes around the feta.1 block feta cheese, 1 pint cherry or grape tomatoes
- Drizzle the feta and tomatoes generously with 2 tablespoons of olive oil. Sprinkle with dried oregano, red pepper flakes (if using), salt, and freshly ground black pepper. - Place the dish in the preheated oven and bake for 25-30 minutes, or until the feta is softened and slightly golden, and the tomatoes have begun to burst and release their juices.
- While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Add your chosen pasta and cook according to package directions until al dente. Reserve about 1/2 cup of the pasta cooking water before draining.8 ounces pasta of your choice
- Once the feta and tomatoes have finished baking, carefully remove the dish from the oven. The feta should be very soft and melty. Add the minced garlic (or garlic powder) to the hot dish and stir it into the softened feta and tomatoes. The heat will cook the garlic and release its fragrance.2-3 cloves garlic, 1 block feta cheese, 1 pint cherry or grape tomatoes
- Using a fork or potato masher, gently mash the feta cheese into the burst tomatoes. Stir everything together to create a creamy, sauce-like consistency. If the sauce seems too thick, add the milk, a tablespoon at a time, and stir until it reaches your desired creaminess.1 block feta cheese, 1 pint cherry or grape tomatoes, 1/4 cup milk
- Add the drained, cooked pasta directly into the baking dish with the feta and tomato sauce. Toss everything together until the pasta is evenly coated in the luscious sauce. If it feels a little dry, add a splash of the reserved pasta water to help loosen it up.8 ounces pasta of your choice
- Taste and adjust seasoning with salt and pepper if needed. Serve immediately, garnished with fresh basil leaves if desired.to taste Salt, to taste freshly ground black pepper, optional fresh basil leaves
Notes
Best enjoyed fresh. For leftovers, refrigerate in an airtight container for up to 3-4 days. Reheat on the stovetop or in the microwave, adding a splash of milk or water to maintain creaminess.
