Ingredients
  

  • 1 cup rolled oats gluten-free if needed
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup almond butter or any nut/seed butter of your choice
  • 1/4 cup honey or maple syrup for vegan option
  • 2 tablespoons poppy seeds
  • 1 tablespoon fresh lemon zest from about 1 large lemon
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • Pinch salt

Method
 

  1. In a medium-sized mixing bowl, add the rolled oats, unsweetened shredded coconut, and poppy seeds. Stir them together thoroughly to ensure even distribution.

  2. To the dry ingredients, add the almond butter, honey or maple syrup, fresh lemon zest, fresh lemon juice, vanilla extract, and a pinch of salt.

  3. Using a sturdy spoon or spatula, mix all the ingredients until they are well combined. You want the mixture to be somewhat sticky and hold together when pressed. If the mixture seems too dry, add another teaspoon of honey/maple syrup or a tiny splash of water. If it seems too wet, add a tablespoon more oats.

  4. For easier rolling, cover the bowl with plastic wrap and place it in the refrigerator for about 15-20 minutes. This allows the oats to absorb some of the moisture and the mixture to firm up.
  5. Once chilled (or if you skipped chilling), scoop out about a tablespoon of the mixture at a time. Roll it between your palms to form small, compact balls, about 1-inch in diameter.
  6. Your Healthy Lemon Poppy Seed Energy Bites are ready to be enjoyed! You can eat them immediately or store them for later.

Notes

Best stored in an airtight container in the refrigerator for up to a week to 10 days. Can be frozen for up to 2-3 months.
