Ingredients
  

  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 packet (1 ounce) taco seasoning low-sodium option recommended
  • 1 tablespoon olive oil
  • 1/2 cup water
  • 8-10 hard taco shells corn or whole wheat for a healthier option
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup shredded cheddar or Monterey Jack cheese optional
  • salsa for serving
  • plain Greek yogurt or sour cream for serving (optional)
  • lime wedges for serving

Method
 

  1. Begin by preheating your oven to 400°F (200°C). While the oven heats up, trim any excess fat from the chicken breasts or thighs. Pat the chicken dry with paper towels.

  2. In a medium bowl, toss the chicken pieces with the taco seasoning. Ensure each piece is evenly coated.

  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the seasoned chicken and sear for about 1-2 minutes per side until lightly browned. If you don't have an oven-safe skillet, you can transfer the chicken to a baking dish after this step.

  4. Pour the 1/2 cup of water into the skillet or baking dish with the chicken. Cover the skillet tightly with a lid or foil, or cover the baking dish with foil. Place the skillet or baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

  5. Once the chicken is cooked, carefully remove the skillet or baking dish from the oven. Transfer the cooked chicken to a cutting board or a clean bowl. Using two forks, shred the chicken into bite-sized pieces.
  6. While the chicken is resting, place your hard taco shells on a baking sheet and warm them in the oven for the last 5 minutes of the chicken's cooking time, or as directed on the taco shell packaging.

  7. Load the warm, crispy taco shells with the shredded chicken. Then, top with your favorite fresh ingredients: shredded lettuce, diced tomatoes, red onion, fresh cilantro, and shredded cheese if desired.

Notes
