Ingredients
  

For the Peach Filling
  • 4 cups fresh or frozen peaches sliced, thawed if frozen
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice
For the Oatmeal Crisp Topping
  • 1 cup rolled oats old-fashioned
  • 1/2 cup almond flour
  • 1/4 cup chopped pecans or walnuts
  • 1/4 cup maple syrup or honey
  • 1/4 cup coconut oil melted
  • 1 teaspoon cinnamon

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish.
  2. In a large bowl, gently toss the peaches with maple syrup, cornstarch, cinnamon, nutmeg, and lemon juice until evenly coated.
  3. Pour the peach mixture into the prepared baking dish and spread evenly.
  4. In a separate medium bowl, combine the rolled oats, almond flour, chopped nuts, maple syrup, melted coconut oil, and cinnamon. Stir until well combined and crumbly.
  5. Sprinkle the oatmeal crisp topping evenly over the peach filling.
  6. Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly.
  7. Let cool for at least 10 minutes before serving. Serve warm, perhaps with a scoop of Greek yogurt or a drizzle of extra maple syrup.

Notes

For a richer flavor, you can add a pinch of salt to the topping mixture. This recipe can be made ahead and reheated.
