- If using fresh strawberries, gently mash them with a fork in a small bowl until they reach your desired consistency. You can also blend them into a puree for a smoother texture. If using frozen strawberries, allow them to thaw slightly before mashing or pureeing.1/2 cup fresh or frozen strawberries
- In a medium bowl, combine the Greek yogurt, chia seeds, and optional honey or maple syrup and vanilla extract. Stir well to ensure the chia seeds are evenly distributed throughout the yogurt. This is where the magic begins to happen as the chia seeds will start absorbing liquid and creating a pudding-like consistency.1 cup plain Greek yogurt, 2 tablespoons chia seeds, 1-2 teaspoons honey or maple syrup, 1/4 teaspoon vanilla extract
- Add the prepared mashed or pureed strawberries to the yogurt mixture. Gently fold them in until just combined. You can swirl them for a marbled effect or mix them thoroughly for an evenly pink hue.1/2 cup fresh or frozen strawberries
- Cover the bowl tightly with plastic wrap or a lid. Place the bowl in the refrigerator and allow it to chill for at least 30 minutes. This crucial step allows the chia seeds to absorb the liquid and plump up, creating the characteristic thick and creamy texture of chia pudding. For an even thicker consistency, you can chill it for longer, even overnight.
- Once chilled, give the Healthy Strawberry Chia Yogurt a quick stir. Spoon it into serving bowls or glasses. Top with your favorite goodies like fresh berries, a sprinkle of crunchy granola, toasted almonds, or an extra drizzle of honey.Fresh berries, granola, sliced almonds, drizzle of honey
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Consistency may thicken over time. Add a splash of milk or water to loosen if needed.
