Ingredients
  

  • 1.5 pounds ground turkey or lean ground beef
  • 2 medium zucchinis trimmed and cut into ½-inch cubes
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon red pepper flakes (optional, for a little heat)
  • salt and freshly ground black pepper to taste
  • 1 (15-ounce) can tomato sauce
  • 1 (8-ounce) can no-sugar-added tomato paste
  • 0.5 cup shredded mozzarella cheese divided
  • 0.25 cup grated Parmesan cheese
  • Optional toppings sliced black olives, chopped bell peppers, pepperoni slices

Method
 

  1. Heat a large skillet or Dutch oven over medium-high heat. Add the ground turkey or beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.

  2. Add the chopped onion to the skillet with the browned meat and cook until softened, about 5-7 minutes. Then, add the minced garlic, cubed zucchini, Italian seasoning, oregano, and red pepper flakes (if using). Season with salt and pepper to taste. Cook, stirring occasionally, for another 8-10 minutes, or until the zucchini has slightly softened but still retains a little bite.

  3. Stir in the tomato sauce and tomato paste. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 10 minutes, allowing the flavors to meld together.

  4. Remove the skillet from the heat. Stir in ¼ cup of the shredded mozzarella cheese and the grated Parmesan cheese until well combined and melted into the sauce.

  5. Divide the zesty zucchini pizza casserole mixture evenly into 4-6 meal prep containers.
  6. Top each bowl with the remaining ¼ cup of shredded mozzarella cheese. Add any desired optional toppings like sliced olives, chopped bell peppers, or pepperoni slices.
