  • 8 large eggs
  • 1 cup milk (whole or 2%)

  • 1/2 cup shredded cheddar cheese

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with butter or non-stick cooking spray.
  2. In a large skillet over medium heat, crumble and cook the breakfast sausage until it is browned and cooked through. If the sausage renders a lot of fat, carefully drain off excess grease, leaving behind about a tablespoon for sautéing the vegetables.

  3. Add the chopped onion and red bell pepper to the same skillet with the sausage. Cook, stirring occasionally, until the onions are softened and translucent, and the bell pepper is tender-crisp. This usually takes about 5-7 minutes.

  4. Spread the cooked sausage and sautéed vegetables evenly over the bottom of your prepared baking dish.
  5. In a large bowl, whisk together the 8 large eggs, 1 cup of milk, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/4 teaspoon of garlic powder, and 1/4 teaspoon of paprika until well combined and slightly frothy.

  6. Stir in the shredded cheddar cheese and Monterey Jack cheese into the egg mixture. Ensure the cheese is distributed evenly.

  7. Carefully pour the egg and cheese mixture evenly over the sausage and vegetable mixture in the baking dish. Make sure the egg mixture covers all the ingredients.
  8. Place the baking dish in the preheated oven. Bake for 35-45 minutes, or until the casserole is set and the center is no longer jiggly. The top should be golden brown and slightly puffed.
  9. Once baked, remove the casserole from the oven and let it rest for about 5-10 minutes before slicing and serving. This allows the casserole to firm up and makes for cleaner slices. Garnish with fresh chopped parsley, if desired.
