- Line a baking sheet or dish with parchment paper or wax paper. This will prevent the bites from sticking and make them easy to remove once frozen.
- In a medium mixing bowl, add the creamy peanut butter, honey or maple syrup, and vanilla extract. Stir vigorously until the ingredients are well combined and form a smooth, homogenous mixture.1 cup creamy natural peanut butter, 1/4 cup honey or maple syrup, 1 teaspoon vanilla extract
- Add the rolled oats, protein powder, and chia seeds to the wet ingredients. - Using a sturdy spoon or spatula, mix all the ingredients together until everything is evenly distributed. The mixture will be thick and somewhat sticky. Keep mixing until there are no dry pockets of protein powder or oats.
- Roll the mixture into small balls, about 1-inch in diameter. You can use your hands, but if the mixture is too sticky, lightly dampen your hands with water or a touch of oil to prevent sticking. Alternatively, you can use a spoon to scoop out portions and then lightly roll them into balls.
- Place the rolled bites onto the prepared baking sheet, ensuring they have a little space between them. Transfer the baking sheet to the freezer and freeze for at least 30-60 minutes, or until firm.
- Once firmed up, your High Protein Frozen Peanut Butter Bites are ready to be enjoyed!
Notes
Store in an airtight container in the refrigerator for up to a week, or in the freezer for up to 2-3 months.
