  • 1.5 pounds sirloin steak trimmed of excess fat and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter divided
  • 6 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste
  • 0.25 cup low-sodium beef broth
  • 1 tablespoon fresh parsley chopped (for garnish)
  • Red pepper flakes Optional, for a touch of heat

Method
 

  1. Pat the cubed sirloin steak dry with paper towels. This is a crucial step to ensure you get a good sear on the beef, which contributes significantly to its flavour and texture. Season the beef cubes generously with salt and black pepper. Ensure each piece is coated evenly.

  2. Heat the olive oil and 2 tablespoons of butter in a large skillet or cast-iron pan over medium-high heat. Once the butter has melted and the pan is hot (you should see a slight shimmer), carefully add the beef cubes in a single layer. Avoid overcrowding the pan; cook in batches if necessary to ensure proper searing. Sear the beef for 2-3 minutes per side, until a beautiful golden-brown crust has formed. Remove the seared beef from the pan and set it aside on a plate.

  3. Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the same skillet. Once the butter has melted, add the minced garlic and Italian seasoning. Sauté the garlic for about 1 minute until fragrant, being careful not to burn it. If you desire a hint of spice, now is the time to add a pinch of red pepper flakes.
