Method
 

  1. In a large skillet or Dutch oven, brown the ground beef or Italian sausage over medium-high heat, breaking it up with a spoon. Drain any excess fat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

  2. Pour in the crushed tomatoes, tomato paste, and red wine (if using). Stir in the dried oregano, dried basil, and red pepper flakes (if desired). Season generously with salt and pepper. Bring the sauce to a simmer, then reduce the heat to low, cover, and let it gently cook for at least 30 minutes, or up to 1-2 hours, stirring occasionally. This allows the flavors to meld beautifully.

  3. In a medium bowl, combine the ricotta cheese, egg, 1/2 cup grated Parmesan cheese, and chopped fresh parsley. Season with a pinch of salt and pepper. Mix well until all ingredients are thoroughly combined.

  4. If using oven-ready lasagna noodles, no pre-boiling is necessary. If using traditional noodles, boil them according to package directions until al dente. Drain and rinse with cold water to prevent sticking. Lay them flat on a clean surface.

  5. Preheat your oven to 375°F (190°C). Spread a thin layer of meat sauce on the bottom of a 9x13 inch baking dish. Arrange a single layer of lasagna noodles over the sauce.

  6. Spread half of the ricotta mixture evenly over the noodles. Top with about 1 ½ cups of shredded mozzarella cheese. Cover with another layer of noodles.

  7. Spoon another generous layer of meat sauce over the noodles. Spread the remaining ricotta mixture, then another 1 ½ cups of mozzarella. Add a final layer of noodles.

  8. Top the last noodle layer with the remaining meat sauce, ensuring the noodles are fully covered. Sprinkle generously with the remaining mozzarella cheese and an extra dusting of Parmesan cheese.
