Ingredients
  

For the Salad Base:
  • 4-5 cups Mixed Greens like spring mix
  • 2 Large Honeycrisp Apples cored and diced
  • 1 cup Dried Cranberries
  • 1/2 cup Candied Pecans or Walnuts roughly chopped
  • 1/4 cup Crumbled Feta Cheese or Goat Cheese
For the Maple-Dijon Vinaigrette:
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Maple Syrup
  • 1/2 teaspoon Salt to taste
  • 1/4 teaspoon Black Pepper freshly ground, to taste

Method
 

  1. In a small bowl, whisk together the extra virgin olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and black pepper until well combined. Set aside.

  2. Core and dice the Honeycrisp apples into uniform, bite-sized pieces.

  3. In a large serving bowl, combine the mixed greens, diced Honeycrisp apples, dried cranberries, and chopped candied pecans or walnuts.

  4. Gently sprinkle the crumbled feta or goat cheese over the salad ingredients.
