Ingredients
  

  • 1 pound lean ground chicken or turkey Cooked and drained of excess fat
  • 1 cup cooked brown rice Soft and easily digestible
  • 1/2 cup cooked, mashed sweet potato
  • 1/4 cup cooked, mashed peas
  • 1/4 cup cooked, finely chopped carrots
  • 1 tablespoon olive oil A source of healthy fats

Method
 

  1. In a medium saucepan over medium heat, cook the ground chicken or turkey until it’s no longer pink. Drain off any excess fat and set aside.

  2. While the meat is cooking, prepare the brown rice according to package directions. Ensure it's soft and fully cooked. Steam or boil the sweet potato, peas, and carrots until tender.

  3. Once cooked, mash the sweet potato and peas until relatively smooth. Finely chop the cooked carrots.

  4. In a large bowl, combine the cooked and drained ground chicken or turkey, cooked brown rice, mashed sweet potato, mashed peas, and finely chopped carrots.
