Ingredients
  

Tea Base
  • 4 cups Water
  • 2 Black Tea bags (high quality) Such as Assam or English Breakfast
Gingerbread Spices
  • 1 tablespoon Fresh Ginger Peeled and thinly sliced
  • 2 Cinnamon Sticks
  • 3 Whole Cloves
  • 1/4 teaspoon Ground Nutmeg
Sweetener (Optional)
  • 2 teaspoons Maple Syrup or Molasses Adjust to taste

Method
 

Instructions
  1. In a small saucepan, combine the 4 cups of water, sliced fresh ginger, cinnamon sticks, and whole cloves.
  2. Bring the mixture to a gentle boil over medium-high heat, then reduce heat immediately to low and simmer for 8 minutes to deeply infuse the spices.
  3. Remove the saucepan from the heat. Stir in the ground nutmeg and your choice of sweetener (maple syrup or molasses, if using).
  4. Add the two black tea bags to the spice-infused water. Steep for exactly 3 to 4 minutes, depending on desired strength. Do not over-steep to avoid bitterness.
  5. Carefully strain the tea through a fine-mesh sieve into mugs, ensuring all solid spices are removed. Discard the solids.
  6. Serve immediately. Garnish each mug with a thin slice of candied ginger or a small dollop of whipped cream, if desired.

Notes

For a creamier version, substitute 1 cup of the water with milk (dairy or alternative) and simmer the spices in the mixture. If you prefer a stronger ginger flavor, lightly crush the ginger slices before adding them to the water.
