Ingredients
  

  • 1 cup 100% Pure Pumpkin Puree Cooked and mashed (Not pumpkin pie filling)
  • ½ cup Plain, Unsweetened Greek Yogurt Mashed or pureed
  • 2 tablespoons Unsweetened Applesauce Mashed
  • 1 tablespoon Coconut Flour Finely milled
  • 1 teaspoon Cinnamon Ground

  • Tablespoon or small cookie scoop

Method
 

  1. In a medium bowl, thoroughly mix the 100% pure pumpkin puree, plain unsweetened Greek yogurt, and unsweetened applesauce until well combined and smooth.
    1 cup 100% Pure Pumpkin Puree, ½ cup Plain, Unsweetened Greek Yogurt, 2 tablespoons Unsweetened Applesauce
  2. Gradually add the coconut flour and cinnamon to the wet mixture, stirring continuously until a thick batter forms.
    1 tablespoon Coconut Flour, 1 teaspoon Cinnamon
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This chilling process will help the mixture firm up, making it easier to handle and shape.
  4. Once chilled, scoop the mixture using a tablespoon or a small cookie scoop and roll it into small, bite-sized balls. Place these balls onto a baking sheet lined with parchment paper.
  5. Place the baking sheet back into the refrigerator and chill for another 30 minutes to an hour. This step solidifies the treats, making them firm and ready to be served.

Notes

Store in an airtight container in the refrigerator for up to 5 days. Freeze for up to 2-3 months.
