- Pat the chicken pieces dry with paper towels. Season them generously with salt and black pepper. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken in a single layer (cook in batches if necessary to avoid overcrowding) and sear for 5-7 minutes, or until browned on all sides and cooked through.
