Instructions
- Ensure the honeydew melon is peeled, seeded, cubed, and frozen for at least 4 hours (or overnight). This is key for a thick texture.
- Add all the solid ingredients into your high-speed blender first: the frozen honeydew cubes and the frozen pineapple chunks.
- Pour in the coconut water (starting with 3/4 cup) and the fresh lime juice. If using, add the grated ginger.
- Begin blending on a low setting, gradually increasing the speed until the mixture is completely smooth and creamy. Use the tamper tool if necessary to push ingredients towards the blade.
- If the smoothie is too thick, add the remaining coconut water 1 tablespoon at a time until the desired consistency is reached. Taste and add honey or agave if needed.
- Pour immediately into chilled glasses and serve garnished with a small piece of fresh pineapple or a mint sprig.
Notes
For a protein boost, add 1 scoop of vanilla or unflavored collagen peptides or protein powder before blending. Using frozen fruit eliminates the need for ice, resulting in a more intense flavor.
