- In a sturdy pitcher or large bowl, combine the diced honeydew melon, fresh mint leaves, sugar/agave nectar, and fresh lime juice.
- Gently muddle the ingredients together. Be careful not to over-muddle the mint, as this can release bitter flavors; aim to bruise the leaves and slightly break down the melon.
- Allow the mixture to sit for 10 minutes at room temperature to let the flavors fully infuse.
- Strain the muddled mixture through a fine-mesh sieve into your serving pitcher, pressing lightly on the solids to extract the liquid. Discard the solids.
- Fill four tall glasses with ice. Divide the honeydew-lime base evenly among the glasses (about 1/4 cup per glass).
- Top each glass with chilled sparkling water or club soda. Stir gently to combine.
- Garnish each mocktail with a few fresh mint sprigs and a few honeydew melon balls threaded onto a skewer.
Notes
For an extra layer of flavor, you can substitute half of the sparkling water with chilled ginger ale. Ensure the honeydew is perfectly ripe for the best natural sweetness.
