  • 1 Ripe Honeydew Melon Diced into 1-inch cubes
  • 1 cup Fresh Mint Leaves Plus extra for garnish
  • 1/2 cup Fresh Lime Juice About 4-5 limes
  • 1/4 cup Sugar or Agave Nectar Adjust to taste
  • 4 cups Sparkling Water or Club Soda Chilled
  • Ice Ice Cubes
  • 1 cup Honeydew Melon Balls For garnish

Instructions
  1. In a sturdy pitcher or large bowl, combine the diced honeydew melon, fresh mint leaves, sugar/agave nectar, and fresh lime juice.
  2. Gently muddle the ingredients together. Be careful not to over-muddle the mint, as this can release bitter flavors; aim to bruise the leaves and slightly break down the melon.
  3. Allow the mixture to sit for 10 minutes at room temperature to let the flavors fully infuse.
  4. Strain the muddled mixture through a fine-mesh sieve into your serving pitcher, pressing lightly on the solids to extract the liquid. Discard the solids.
  5. Fill four tall glasses with ice. Divide the honeydew-lime base evenly among the glasses (about 1/4 cup per glass).
  6. Top each glass with chilled sparkling water or club soda. Stir gently to combine.
  7. Garnish each mocktail with a few fresh mint sprigs and a few honeydew melon balls threaded onto a skewer.

Notes

For an extra layer of flavor, you can substitute half of the sparkling water with chilled ginger ale. Ensure the honeydew is perfectly ripe for the best natural sweetness.
