- Cook the diced bacon over medium heat until crispy. Remove the bacon from the pot and set aside.6 slices bacon

- Season the Hoppin' John Black Eyed Peas with salt and pepper to taste, then serve hot.salt and pepper

Soak black eyed peas overnight and drain well before cooking.
