- Heat 2 cups of water in a small saucepan or microwave until just before boiling (about 175°F / 80°C for green tea). Do not boil.
- Place the green tea bags (or loose leaf tea in an infuser) into the hot water. Steep for 3 to 4 minutes. Remove tea bags/infuser immediately to prevent bitterness.
- While the tea is still warm, stir in the honey or maple syrup until fully dissolved. Allow the tea concentrate to cool slightly at room temperature for about 5 minutes.
- In a large pitcher or two tall glasses, combine the cooled green tea concentrate, 1 cup of coconut water, and 1 cup of cold water. Stir well to combine.
- Fill two serving glasses completely with ice cubes.
- Pour the iced tea mixture over the ice. Garnish each serving with a slice of lime or lemon before serving immediately.
Notes
For a stronger flavor, reduce the amount of added cold water. Ensure the green tea is not over-steeped, as this can make the drink astringent. Shelf life of pre-made concentrate is 2 days in the refrigerator.
