  • 1/4 cup melted chocolate chips semi-sweet or dark work best

  • chocolate syrup Optional for garnish
  • shaved chocolate Optional for garnish
  • crushed Oreo cookies Optional for garnish

Equipment

  • Electric mixer
  • Medium Bowl

Method

  1. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add both the granulated sugar and powdered sugar to the bowl and continue to beat until well combined and no lumps remain.
8 ounces cream cheese, 1/4 cup granulated sugar, 1/4 cup powdered sugar
  2. Stir in the vanilla extract.
    1 teaspoon vanilla extract
  3. In a separate, chilled bowl, whip the cold heavy whipping cream on medium-high speed until stiff peaks form. Be careful not to overmix.
    1/2 cup heavy whipping cream
  4. Gently fold about one-third of the whipped cream into the cream cheese mixture to lighten it. Then, add the remaining whipped cream and fold it in until just combined and no white streaks are visible. Avoid overmixing to maintain the airy texture.
  5. Carefully fold in the melted chocolate chips (ensure they are not too hot when adding them, so they don't melt the cream cheese mixture) until evenly distributed, creating a marbled or uniform chocolate cheesecake filling.
    1/4 cup melted chocolate chips
  6. Arrange the prepared strawberries in individual serving dishes, bowls, or on a platter.
    1 pint fresh strawberries
  7. Spoon or pipe the chocolate cheesecake filling generously over the strawberries.
  8. If desired, garnish your Irresistible Chocolate Cheesecake Strawberries with a drizzle of chocolate syrup, a sprinkle of shaved chocolate, or crushed Oreo cookie crumbs for an extra touch of decadence.
chocolate syrup, shaved chocolate, crushed Oreo cookies
  9. Serve immediately, or chill for at least 15-30 minutes before serving to allow the flavors to meld and the filling to slightly set.

Notes

To store any leftover Irresistible Chocolate Cheesecake Strawberries, it's best to keep them in an airtight container or covered directly in their serving dishes in the refrigerator. They will remain fresh and delicious for up to 2-3 days. Due to the fresh fruit and dairy components, this dessert is generally not suitable for freezing as the texture of the strawberries and cheesecake filling can be compromised upon thawing. If you find yourself with an abundance just before they reach their optimal freshness, consider enjoying them as is or incorporating them into a trifle by layering them with cake or cookie crumbs.
