- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large skillet over medium-high heat, cook the ground beef, breaking it up with a spoon, until browned. Drain off any excess grease.1 pound ground beef
- Add the chopped yellow onion and minced garlic to the skillet with the beef. Cook for about 3-5 minutes, or until the onion is softened and translucent.1/4 cup finely chopped yellow onion, 2 cloves garlic, minced
- Stir in the finely diced jalapenos, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for another 1-2 minutes until fragrant. Remove the skillet from the heat.1/4 cup finely diced fresh jalapenos, 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, Salt and freshly ground black pepper
- In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, and shredded Monterey Jack cheese. Add the beef and onion mixture to the cheese mixture. Stir until well combined and creamy. If using, stir in the chopped cilantro.4 ounces cream cheese, softened, 1/2 cup shredded cheddar cheese, 1/4 cup shredded Monterey Jack cheese, 1 tablespoon chopped fresh cilantro
- Unroll the refrigerated crescent roll dough onto a lightly floured surface. Press the seams together to form a solid rectangle.1 (8-ounce) package refrigerated crescent roll dough
- Spread the jalapeno-cheese-beef mixture evenly over the crescent roll dough, leaving a small border around the edges.
- Starting from the long edge, carefully and tightly roll up the dough with the filling, like a jelly roll. Pinch the seam to seal it. Using a sharp knife, slice the roll into 1-inch thick rounds.
- Place the sliced twists onto the prepared baking sheet, cut-side up, leaving a little space between each one as they will puff up. Brush the tops of each twist with the beaten egg wash. If desired, sprinkle with sesame seeds or poppy seeds.1 large egg, beaten, Sesame seeds or poppy seeds
- Bake for 15-18 minutes, or until the crescent rolls are golden brown and puffed up, and the filling is bubbly.
- Let the Jalapeno Popper Twists Cheesy Spicy Beef Bites cool on the baking sheet for a few minutes before serving. They are best served warm.
