Ingredients
  

  • 1 cup full-fat cottage cheese drained very well (approximately 240g)
  • 1/2 cup rolled oats use certified gluten-free if needed (approximately 50g)
  • 1/4 cup vanilla or unflavored protein powder whey, casein, or plant-based (approximately 30g)
  • 2 tablespoons honey or maple syrup adjust to taste (approximately 30ml)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/2 cup fresh or frozen blueberries lightly mashed (approximately 75g)
  • 1/4 teaspoon vanilla extract
  • pinch salt

Method
 

  1. Begin by thoroughly draining your cottage cheese. This is a crucial step to prevent overly wet bites. You can place the cottage cheese in a fine-mesh sieve lined with a cheesecloth or paper towel, and let it sit over a bowl for about 15-20 minutes to allow excess liquid to drain. The drier the cottage cheese, the better the texture of your bites will be.
    1 cup full-fat cottage cheese
  2. In a medium-sized mixing bowl, combine the rolled oats, protein powder, and a pinch of salt. Whisk these ingredients together until they are well incorporated and there are no clumps of protein powder.

  3. In a separate smaller bowl, combine the drained cottage cheese, honey or maple syrup, lemon zest, fresh lemon juice, vanilla extract, and mashed blueberries. Stir these ingredients together until you have a relatively smooth and homogenous mixture. The mashed blueberries will add beautiful color and pockets of flavor.

  4. Gradually add the wet ingredients to the bowl with the dry ingredients. Stir everything together until it's just combined. Be careful not to overmix. The mixture should be thick enough to hold its shape but still slightly moist. If the mixture seems too wet, you can add another tablespoon of rolled oats or protein powder, a little at a time. If it seems too dry, add a tiny bit more honey or maple syrup or a teaspoon of milk.

  5. Line a small baking sheet or plate with parchment paper. Using a tablespoon or a mini ice cream scoop, portion the mixture and roll it into bite-sized balls with your hands. You should aim for approximately 12-15 balls, depending on your desired size. The mixture might be a little sticky, so you can lightly dampen your hands with water or oil if needed.
  6. Place the baking sheet with the formed bites into the refrigerator for at least 30 minutes. This chilling time is essential for the bites to firm up and hold their shape properly.

Notes

Best stored in an airtight container in the refrigerator for up to 4-5 days. Can be frozen for up to 1-2 months. No reheating is generally required or recommended.
