  • 2 tablespoons poppy seeds
  • 1 tablespoon fresh lemon zest from about 1 medium lemon
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • Pinch salt optional, to enhance flavors

Method
 

  1. In a medium-sized mixing bowl, add the rolled oats. If your oats are particularly large, you can pulse them a few times in a food processor to break them down slightly, but this is entirely optional for texture preference.

  2. To the bowl with the oats, add the almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt if you’re using it. Stir everything together until it’s well combined and starts to form a sticky mass. It might seem a little dry at first, but as you add the remaining ingredients, it will come together.

  3. Next, add the poppy seeds, fresh lemon zest, and fresh lemon juice to the bowl. Stir vigorously until all the ingredients are evenly distributed throughout the mixture. Ensure the zest and juice are thoroughly mixed in for that signature bright lemon flavor in every bite.

  5. Once chilled, use a tablespoon or a small cookie scoop to portion the mixture. Roll each portion between your palms to form compact, bite-sized balls, approximately 1-inch in diameter. If the mixture is too sticky to handle, you can lightly dampen your hands with water or a touch of almond butter.
