- In a medium-sized mixing bowl, add the rolled oats. If your oats are particularly large, you can pulse them a few times in a food processor to break them down slightly, but this is entirely optional for texture preference.1 cup rolled oats
- To the bowl with the oats, add the almond butter, honey (or maple syrup), vanilla extract, and a pinch of salt if you’re using it. Stir everything together until it’s well combined and starts to form a sticky mass. It might seem a little dry at first, but as you add the remaining ingredients, it will come together.1 cup rolled oats, 1/2 cup almond butter, 1/3 cup honey or maple syrup, 1 teaspoon vanilla extract, Pinch salt
- Next, add the poppy seeds, fresh lemon zest, and fresh lemon juice to the bowl. Stir vigorously until all the ingredients are evenly distributed throughout the mixture. Ensure the zest and juice are thoroughly mixed in for that signature bright lemon flavor in every bite.2 tablespoons poppy seeds, 1 tablespoon fresh lemon zest, 1 tablespoon fresh lemon juice
- Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Place it in the refrigerator for at least 15-20 minutes. This chilling step is crucial as it helps the mixture firm up, making it much easier to roll into bite-sized balls.
- Once chilled, use a tablespoon or a small cookie scoop to portion the mixture. Roll each portion between your palms to form compact, bite-sized balls, approximately 1-inch in diameter. If the mixture is too sticky to handle, you can lightly dampen your hands with water or a touch of almond butter.
- Your Lemon Poppy Seed Energy Bites are now ready to be enjoyed! They are best served slightly chilled.
