- Start by washing your green grapes thoroughly. Once clean, slice each grape in half. If your grapes are particularly small, you can leave them whole, but halving them makes them easier to eat and adds to the visual appeal of the salad.1 cup green grapes
- Peel the honeydew melon, discard the seeds, and then cut the flesh into bite-sized cubes. Aim for pieces that are roughly the same size as the other fruits in the salad for a cohesive presentation and eating experience.1 cup honeydew melon
- Peel the kiwis using a vegetable peeler or a small knife. Once peeled, slice them into rounds or half-moons, depending on your preference. The bright green flesh with its tiny black seeds will add a beautiful color contrast to the salad.1 cup kiwi
- If you are using a whole pineapple, peel, core, and cut it into bite-sized cubes. If you are using pre-cut pineapple, simply ensure the pieces are cubed to a suitable size for a fruit salad.1 cup golden pineapple
- Gently rinse the fresh raspberries and blueberries. Add them whole to the mixing bowl. Be careful when handling raspberries as they are delicate and can easily break.1/2 cup fresh raspberries, 1/4 cup fresh blueberries
- Wash and thoroughly dry the fresh mint leaves. Stack a few leaves on top of each other, roll them tightly into a cylinder, and then thinly slice across the roll to create fine ribbons of mint, known as chiffonade. This releases the mint's aromatic oils.2 tablespoons fresh mint leaves
- In a large mixing bowl, gently combine the halved green grapes, cubed honeydew melon, sliced kiwi, cubed golden pineapple, raspberries, and blueberries.1 cup green grapes, 1 cup honeydew melon, 1 cup kiwi, 1 cup golden pineapple, 1/2 cup fresh raspberries, 1/4 cup fresh blueberries
- If you desire a brighter, more zesty flavor, gently drizzle the fresh lime juice over the fruit mixture. For a touch of sweetness, you can also add a teaspoon of honey or maple syrup.1 tablespoon lime juice, 1 teaspoon honey or maple syrup
- Using a large spoon or rubber spatula, gently toss all the ingredients together until they are well combined. Be very careful not to mash the delicate berries. You want the fruits to be coated with the optional lime juice and sweetener, and the mint to be evenly distributed.
- For the best flavor and a truly refreshing experience, cover the bowl and refrigerate the Leprechaun Fruit Salad for at least 15-30 minutes before serving. This allows the flavors to meld together beautifully. Serve chilled.
