Ingredients
  

  • 1 pound Ground beef, original
  • 1 packet Taco seasoning, original (1 ounce)
  • 1 can Refried beans, original (15 ounces)
  • 1 can Rotel diced tomatoes and green chilies, undrained (10 ounces)
  • 1 package Cream cheese, softened and cut into cubes (8 ounces)
  • 1/2 cup Sour cream
  • 1/2 cup Shredded cheddar cheese plus more for topping
  • 1/4 cup Chopped fresh cilantro (optional, for garnish)
  • Diced tomatoes Optional topping
  • Sliced black olives Optional topping
  • Chopped green onions Optional topping
  • Jalapeño slices Optional topping

Method
 

  1. In a large skillet over medium-high heat, cook the ground beef, breaking it up with a spoon, until it's fully browned and no pink remains. Drain off any excess grease.

  2. Sprinkle the taco seasoning over the browned ground beef and stir well to combine. Cook for another minute, stirring constantly, until the seasoning is fragrant.

  3. Spread the refried beans evenly over the bottom of your slow cooker insert.

  4. Spoon the seasoned ground beef mixture over the refried beans, spreading it out gently.

  5. Pour the undrained can of Rotel diced tomatoes and green chilies over the beef layer.

  6. Scatter the cubed softened cream cheese over the top of the tomato and beef mixture.

  7. Sprinkle the 1/2 cup of shredded cheddar cheese evenly over everything.

  8. Cover the slow cooker and cook on LOW for 2–3 hours, or on HIGH for 1.5–2 hours. The dip is ready when the cheese is melted and bubbly, and everything is heated through.
  9. Once heated, stir in the 1/2 cup of sour cream until well combined, creating a wonderfully creamy texture.
