  • 1 teaspoon coconut oil or vegetable oil optional, helps with smoother melting
  • 1 cup Lucky Charms cereal use the marshmallows from the box, or purchase marshmallow-only bags for an extra boost!
  • 1/2 cup sprinkles rainbow jimmies, nonpareils, or a mix for extra sparkle
  • 1/4 cup colorful candy melts optional, for drizzling

Method
 

  1. Line a large baking sheet with parchment paper or a silicone baking mat. This will prevent the bark from sticking and make for easy removal once it's set.
  2. Place the white chocolate chips in a microwave-safe bowl. Add the coconut oil or vegetable oil if you're using it. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat white chocolate, as it can seize up. Alternatively, you can melt the chocolate using a double boiler: place the chips in a heatproof bowl set over a pot of simmering water, ensuring the bottom of the bowl doesn't touch the water. Stir until fully melted and smooth.

  3. Pour the melted white chocolate onto the prepared baking sheet. Use a spatula to spread it into an even layer, about 1/4-inch to 1/2-inch thick. Aim for a roughly rectangular or oval shape, but don't worry too much about perfection.

  4. While the chocolate is still wet, generously sprinkle the Lucky Charms marshmallows and your chosen sprinkles evenly over the surface of the melted white chocolate. Gently press them down slightly so they adhere to the chocolate. You can also add any extra colorful candies you desire at this stage.
    1 cup Lucky Charms cereal, 1/2 cup sprinkles
  5. If you're using candy melts for extra visual appeal, melt them according to package directions (usually in the microwave). Drizzle the melted candy melts over the Lucky Charms and sprinkles in a decorative pattern. You can use a spoon or a piping bag for this.

  6. Carefully transfer the baking sheet to the refrigerator and chill for at least 1 hour, or until the bark is completely firm and set. You can also leave it at room temperature in a cool environment for a few hours to set, though refrigeration is faster.
  7. Once the bark is firm, lift the parchment paper or silicone mat off the baking sheet. Break the Lucky Charms Bark into irregular pieces by hand or by gently tapping it with a rolling pin.
  8. Your magical Lucky Charms Bark is ready to be devoured!

Notes

Store in an airtight container at room temperature in a cool, dry place. It will remain fresh and delicious for up to one week. If your home is particularly warm, or if you live in a humid climate, consider storing it in the refrigerator. However, be aware that refrigeration can sometimes cause the chocolate to develop a slight bloom (a whiteish coating), which is harmless but can affect the appearance. If refrigerated, allow the bark to sit at room temperature for about 10-15 minutes before serving to soften slightly for the best texture. Reheating is not recommended.
