- Lightly grease a 9x13 inch baking pan with butter or cooking spray, or line it with parchment paper, leaving an overhang on the sides. This will make it much easier to remove the Lucky Charms Treats later.
- In a large saucepan, melt the 1/4 cup of unsalted butter over low heat. Be patient and don't rush this step; low and slow is the key to perfectly melted butter.1/4 cup (1/2 stick) unsalted butter
- Once the butter is completely melted, add 3 cups of the marshmallows (about half the bag) to the saucepan. Stir continuously until the marshmallows are completely melted and smooth. This creates the sticky, sweet binder for our Lucky Charms Treats.1 package (10 ounces, about 40) marshmallows
- If you're using vanilla extract, stir it into the melted marshmallow mixture now. This subtle addition can really elevate the flavor profile of your treats.1/2 teaspoon vanilla extract
- Remove the saucepan from the heat. Immediately add the 6 cups of Lucky Charms cereal to the melted marshmallow mixture. Gently fold the cereal into the marshmallow mixture until it is evenly coated. Work quickly, as the marshmallow mixture will begin to set.6 cups Lucky Charms cereal
- Now, add the remaining 2 cups of marshmallows directly into the cereal mixture. Gently fold them in, allowing them to remain mostly whole. This is where you’ll get those signature gooey pockets of marshmallow throughout your Lucky Charms Treats, adding an extra layer of deliciousness and a fun textural contrast.1 package (10 ounces, about 40) marshmallows
- Transfer the mixture to your prepared baking pan. Using a buttered spatula or your hands (lightly greased so the mixture doesn't stick), gently press the mixture into an even layer in the pan. Avoid pressing too firmly, as this can make the treats dense. You want them to be slightly chewy and airy.
- Let the Lucky Charms Treats cool completely at room temperature for at least 30 minutes, or until they are firm to the touch. Once cooled, use the parchment paper overhang (if used) to lift the entire block out of the pan. Cut the treats into squares or desired shapes using a sharp knife.
Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, individually wrap and freeze for up to 2 months. Thaw at room temperature before enjoying.
