  • 2 cups leftover mashed potatoes approx. 450g
  • 1 cup leftover Thanksgiving stuffing approx. 150g, cooled
  • 1 large egg lightly beaten
  • 1/4 cup finely chopped fresh chives or green onions optional
  • 1/4 cup grated Parmesan cheese approx. 25g
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper freshly ground, to taste
  • Pinch salt optional, to taste
  • 2 tablespoons all-purpose flour for dredging
  • 1/2 cup panko breadcrumbs approx. 50g, for coating
  • 2-3 tablespoons vegetable oil or olive oil for frying
  • Optional dips Cranberry sauce, gravy, sour cream, sriracha mayo

Method
 

  1. Prepare the Mixture: In a large mixing bowl, combine the leftover mashed potatoes and stuffing. Use a fork or your hands to gently break up any large clumps of stuffing and ensure an even distribution.

Add Flavor and Binder: To the potato and stuffing mixture, add the lightly beaten egg, chopped chives (or green onions), grated Parmesan cheese, onion powder, garlic powder, black pepper, and an optional pinch of salt. Mix everything thoroughly until well combined. The mixture should be firm enough to hold its shape when rolled. If it seems too wet, add a tablespoon or two of flour or plain breadcrumbs until it reaches a manageable consistency.

  3. Form the Bites: Take small portions of the mixture, about 1 to 1.5 tablespoons each, and roll them into compact balls or small cylindrical log shapes. Aim for uniform size to ensure even cooking. Place the formed bites on a plate or baking sheet.
  4. Dredge and Coat: Set up two shallow dishes. Put the all-purpose flour in one and the panko breadcrumbs in the other. Lightly dust each formed bite first with flour, shaking off any excess. Then, roll each flour-coated bite in the panko breadcrumbs, pressing gently to ensure an even and thorough coating.

  5. Cook the Bites (Pan-Frying Method): Heat 2-3 tablespoons of vegetable oil (or olive oil) in a large non-stick skillet over medium heat. Once the oil shimmers, carefully place the coated mashed potato stuffing bites into the hot oil, ensuring not to overcrowd the pan. Cook in batches if necessary. Fry the bites for 3-4 minutes on each side, turning occasionally, until they are golden brown and crispy all over. The internal temperature should be heated through.

  6. Drain and Serve: Once cooked, transfer the golden-brown bites to a plate lined with paper towels to drain any excess oil. Serve immediately with your favorite dipping sauces.

Notes

For a healthier alternative, try baking or air frying these bites. To bake, preheat oven to 400°F (200°C), arrange on a greased baking sheet, and bake for 15-20 minutes, flipping halfway. For air frying, preheat to 375°F (190°C), lightly spray with cooking spray, and air fry for 10-15 minutes, shaking the basket halfway.
