  • 1.5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Baking powder
  • 1 teaspoon Matcha powder (ceremonial grade preferred)
  • 0.5 teaspoon Salt
Wet Ingredients
  • 2 large Eggs separated
  • 1.5 cups Milk whole milk recommended
  • 0.5 cup Melted butter unsalted
  • 1 teaspoon Vanilla extract
For Serving
  • as needed Maple syrup
  • 1 cup Fresh berries or powdered sugar for garnish

Method
 

Instructions
  1. In a large bowl, whisk together all the dry ingredients: flour, sugar, baking powder, matcha powder, and salt. Ensure the matcha is fully incorporated and there are no clumps.
  2. In a separate medium bowl, whisk the egg yolks, milk, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix; a few small lumps are acceptable. Set the batter aside.
  4. In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter in two additions using a spatula, being careful not to deflate the air from the whites.
  5. Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the plates if necessary. Pour the batter onto the hot waffle iron (use the amount recommended by your iron) and cook until golden brown and crispy, typically 4-6 minutes.
  6. Carefully remove the waffles from the iron. Serve immediately topped generously with quality maple syrup and your choice of fresh berries or a dusting of powdered sugar.

Notes

For extra vibrancy, sift the matcha powder before mixing. Overmixing the batter will result in tough waffles; treat the egg whites gently during folding for the fluffiest texture.
