Method
 

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
  2. In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and packed light brown sugar until the mixture is light and fluffy. This usually takes about 2-3 minutes with an electric mixer.

  3. Beat in the vanilla extract and salt until well combined. Scrape down the sides of the bowl as needed to ensure everything is thoroughly incorporated.

  4. Gradually add the all-purpose flour to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix the dough at this stage.

  5. Add the toasted, chopped pecans to the dough and gently fold them in using a spatula or wooden spoon until evenly distributed. You want to ensure the pecans are mixed in without overworking the dough.

  8. Let the cookies cool on the baking sheets for 5 minutes before carefully transferring them to a wire rack to cool completely. This allows them to firm up properly without breaking.
