- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
- In a medium bowl, combine the full-fat cottage cheese, large egg, grated Parmesan cheese, all-purpose flour, garlic powder, dried oregano, salt, and black pepper. - Spoon tablespoon-sized dollops of the cottage cheese mixture onto the prepared baking sheet, leaving about 1.5 to 2 inches of space between each dollop. Aim for roughly 12-16 bites, depending on your desired size. Gently flatten each dollop slightly with the back of your spoon to create a flatter surface for toppings.
- Carefully spoon about 1 teaspoon of pizza sauce or marinara sauce onto the center of each cottage cheese mixture dollop. Spread it gently to cover the surface, leaving a small border around the edge.2 tablespoons pizza sauce or marinara sauce
- Sprinkle about 1 teaspoon of shredded mozzarella cheese over the sauce on each bite. Now is the time to add your desired toppings!1/4 cup shredded mozzarella cheese
- Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges of the bites are golden brown and the mozzarella cheese is melted and bubbly.
- Once baked, carefully remove the baking sheet from the oven. Let the Mini Cottage Cheese Pizza Bites cool on the baking sheet for a few minutes before transferring them to a serving platter.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or conventional oven at 350°F (175°C) for 5-7 minutes for best results. Can also be frozen for up to 1 month.
