  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons all-purpose flour (or gluten-free alternative)
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon dried oregano
  • 1 pinch salt
  • 1 pinch black pepper
  • 2 tablespoons pizza sauce or marinara sauce
  • 1/4 cup shredded mozzarella cheese

Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, combine the full-fat cottage cheese, large egg, grated Parmesan cheese, all-purpose flour, garlic powder, dried oregano, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated and you have a thick, uniform batter.

  3. Spoon tablespoon-sized dollops of the cottage cheese mixture onto the prepared baking sheet, leaving about 1.5 to 2 inches of space between each dollop. Aim for roughly 12-16 bites, depending on your desired size. Gently flatten each dollop slightly with the back of your spoon to create a flatter surface for toppings.
  4. Carefully spoon about 1 teaspoon of pizza sauce or marinara sauce onto the center of each cottage cheese mixture dollop. Spread it gently to cover the surface, leaving a small border around the edge.

  5. Sprinkle about 1 teaspoon of shredded mozzarella cheese over the sauce on each bite. Now is the time to add your desired toppings!

  6. Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges of the bites are golden brown and the mozzarella cheese is melted and bubbly.
  7. Once baked, carefully remove the baking sheet from the oven. Let the Mini Cottage Cheese Pizza Bites cool on the baking sheet for a few minutes before transferring them to a serving platter.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or conventional oven at 350°F (175°C) for 5-7 minutes for best results. Can also be frozen for up to 1 month.
