- In a large mixing bowl, beat the softened unsalted butter with an electric mixer on medium speed until it’s light and fluffy, about 2-3 minutes. This ensures a smooth and creamy foundation for your frosting.1 cup unsalted butter, softened
- With the mixer on low speed, gradually add the sifted powdered sugar, about one cup at a time. Mix until just combined after each addition. Sifting the powdered sugar is key to preventing lumps and achieving a silky smooth consistency.3 cups powdered sugar, sifted
- Once all the powdered sugar is incorporated, increase the mixer speed to medium. Add the milk or heavy cream, peppermint extract, and green food coloring (if using). Mix until the frosting is smooth and creamy. Notes
Store any leftover Mint Chocolate Chip Frosting in an airtight container in the refrigerator for up to 5-7 days. The frosting will firm up considerably in the fridge. Before using refrigerated frosting, allow it to sit at room temperature for about 30-60 minutes. You may need to whip it again with a mixer for a minute or two to restore its creamy consistency.
For longer storage, you can freeze Mint Chocolate Chip Frosting. Place it in a freezer-safe airtight container or heavy-duty freezer bag. It can be stored in the freezer for up to 2-3 months. To thaw, transfer the frozen frosting to the refrigerator and let it thaw overnight. Once thawed, bring it to room temperature and whip it as described above to regain its smooth texture.
