Ingredients

  • 1 cup Cooked Chicken Breast Shredded
  • 1/2 cup Cooked White Rice Plain and cooked until soft
  • 1/4 cup Cooked Sweet Potato Mashed
  • 2 tablespoons Fresh Parsley Finely chopped
  • 1 tablespoon Plain, Unsweetened Yogurt Full-fat is best. Ensure it does not contain xylitol.
  • 1 teaspoon Fresh Mint Leaves Finely chopped
  • 1 Egg Beaten

Equipment

  • Medium Mixing Bowl
  • - Baking Sheet
  • - Parchment Paper
  • Wire rack

Method

  1. In a medium mixing bowl, combine the shredded cooked chicken breast, mashed cooked sweet potato, and cooked white rice. Ensure all components are well-mixed to create a cohesive base.
1 cup Cooked Chicken Breast, 1/2 cup Cooked White Rice, 1/4 cup Cooked Sweet Potato
  2. Add the finely chopped fresh parsley and finely chopped fresh mint leaves to the mixture. Stir them in thoroughly, distributing the fresh herbs evenly throughout the chicken and rice base.
2 tablespoons Fresh Parsley, 1 teaspoon Fresh Mint Leaves
  3. Pour the beaten egg into the bowl with the other ingredients. Gently stir everything together until it forms a well-combined, slightly sticky mixture.
    1 Egg
  4. Stir in the tablespoon of plain, unsweetened yogurt. Mix until it is fully incorporated into the treat mixture.
    1 tablespoon Plain, Unsweetened Yogurt
  5. Lightly grease your hands or a baking sheet. Take small portions of the mixture (about a tablespoon each) and roll them into bite-sized balls or flatten them slightly into disc shapes for easier consumption.
  6. Preheat your oven to 350°F (175°C). Place the formed treats on a parchment-lined baking sheet, ensuring they are not touching. Bake for approximately 20-25 minutes, or until the treats are firm to the touch and slightly golden brown around the edges. The texture should be solid but still slightly soft.
  7. Once baked, remove the treats from the oven and let them cool completely on a wire rack. This helps them firm up further and prevents condensation, which can lead to spoilage.

Notes
