- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together the flour, granulated sugar, baking soda, cinnamon, and salt. Make a well in the center of the dry ingredients.
- In a separate medium bowl, combine the mashed peaches, melted butter, beaten egg, milk, and vanilla extract. Whisk until well combined.
- Pour the wet ingredients into the well of the dry ingredients. Stir until just combined, being careful not to overmix. A few lumps are okay.
- Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the top with turbinado sugar, if desired.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top begins to brown too quickly, loosely tent with aluminum foil.
- Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
Notes
For an extra peachy flavor, you can fold in 1/2 cup of fresh or frozen (and thawed) diced peaches into the batter along with the wet ingredients. Ensure peaches are well-drained if using frozen.
