Ingredients
  

Dry Ingredients
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Ground cinnamon
  • 1/4 teaspoon Salt
Wet Ingredients & Mix-ins
  • 1 cup Granulated sugar
  • 1/2 cup Unsalted butter, softened or melted
  • 2 Large eggs
  • 1/4 cup Milk whole or 2%
  • 1 teaspoon Vanilla extract
  • 2 medium Nectarines peeled and finely diced
  • 1/2 cup Chopped walnuts or pecans (optional)

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9x5 inch loaf pan, or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a separate bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the milk and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix. Gently fold in the diced nectarines and optional nuts.
  5. Pour the batter evenly into the prepared loaf pan. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely before slicing.

Notes

For an extra burst of flavor, toss the diced nectarines with 1 tablespoon of the dry sugar before folding them into the batter. If nectarines are unavailable, ripe peaches work wonderfully as a substitute.
