Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a standard 9x5 inch loaf pan, or line it with parchment paper.
- In a large bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
- In a separate bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the milk and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix. Gently fold in the diced nectarines and optional nuts.
- Pour the batter evenly into the prepared loaf pan. Bake for 55 to 65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before carefully removing it to a wire rack to cool completely before slicing.
Notes
For an extra burst of flavor, toss the diced nectarines with 1 tablespoon of the dry sugar before folding them into the batter. If nectarines are unavailable, ripe peaches work wonderfully as a substitute.
