- Ensure your nectarine slices (and banana, if using) are completely frozen. Place the fruit slices in a single layer on a parchment-lined baking sheet and freeze for at least 6 hours, or preferably overnight.
- Remove the frozen nectarine slices from the freezer and let them sit on the counter for 5-7 minutes to slightly soften before processing.
- Load the frozen fruit into a food processor or a specialized Yonanas machine. Process the fruit according to your machine's instructions, using the tamper to push the fruit down towards the blades.
- If using a food processor, you may need to stop and scrape down the sides several times. Add the optional lemon juice or vanilla extract now, if desired, to aid in blending and enhance flavor.
- Continue processing until the mixture achieves a smooth, soft-serve ice cream consistency. Do not over-process, or it will turn soupy.
- Serve immediately in bowls or cones. Garnish with fresh fruit slices or a sprinkle of cinnamon.
Notes
The ripeness of the fruit is crucial for the best texture. Overripe fruit yields the sweetest and creamiest results. If the mixture is too hard, let it sit for another 2 minutes before trying again. This recipe is naturally vegan and dairy-free.
