Method
- Place the pitted Medjool dates in a small bowl and cover them with warm water. Let them soak for about 10 minutes. This softens them, making them easier to blend into a sticky paste that will act as your binder. Once softened, drain the water thoroughly.1 cup pitted Medjool dates
- In a medium mixing bowl, add the unsweetened cocoa powder, rolled oats, chocolate protein powder, and a pinch of salt. Whisk these dry ingredients together to ensure they are evenly distributed. This helps prevent clumps of cocoa powder or protein powder in your finished bites.1/2 cup unsweetened cocoa powder, 1/2 cup rolled oats, 1 scoop (approx. 30g) chocolate protein powder, Pinch salt
- Add the drained Medjool dates to the bowl with the dry ingredients. Pour in the unsweetened almond milk, natural peanut butter, and vanilla extract.1 cup pitted Medjool dates, 1/4 cup unsweetened almond milk, 2 tablespoons natural peanut butter, 1 teaspoon vanilla extract
- Using a food processor or a high-powered blender, pulse and then process the ingredients until a thick, sticky dough forms. You may need to scrape down the sides of the food processor a few times to ensure everything is incorporated. The mixture should be moist enough to hold together when squeezed, but not overly wet. If it seems too dry, add another tablespoon of almond milk, a little at a time. If it seems too wet, add a tablespoon of oats or protein powder.
- If you're using any optional mix-ins like chopped nuts or mini chocolate chips, add them now. Pulse a few more times to gently incorporate them into the dough. Be careful not to over-process at this stage; you want the mix-ins to remain recognizable.chopped nuts, mini chocolate chips
- Take about a tablespoon of the brownie dough and roll it between your palms to form a small ball, about 1 inch in diameter. If the dough is sticking to your hands, you can lightly dampen them with water or a touch of oil.
- If desired, you can roll the finished bites in toppings like shredded coconut, more mini chocolate chips, or finely chopped nuts for an extra textural and flavor boost.shredded coconut, mini chocolate chips, chopped nuts
- Place the rolled No-Bake Brownie Protein Bites on a parchment-lined plate or baking sheet. Once all the dough has been rolled, refrigerate them for at least 20-30 minutes to allow them to firm up. This makes them chewier and prevents them from falling apart.
