  • 0.5 teaspoon vanilla extract
  • 1.5 cups heavy whipping cream divided

Method

  4. In a separate, clean bowl, whip 1 cup of the heavy whipping cream with an electric mixer on medium-high speed until stiff peaks form.

  5. Gently fold about two-thirds of the whipped cream into the cream cheese mixture until just combined. Be careful not to overmix.
  6. Spoon the minty cream cheese filling evenly into the prepared frozen crust. Smooth the top with a spatula.
  7. Cover the pie loosely with plastic wrap and refrigerate for at least 4-6 hours, or preferably overnight, until firm. Before serving, whip the remaining ½ cup of heavy whipping cream until soft peaks form. Dollop or pipe the whipped cream over the top of the chilled pie.
