- Line a standard 12-cup muffin tin with paper liners. This will ensure your cups release easily and maintain their shape.
- In a medium-sized mixing bowl, combine the creamy peanut butter, honey or maple syrup, unsweetened applesauce, and vanilla extract. Stir thoroughly until all ingredients are well incorporated and you have a smooth, consistent mixture. - Spoon the oat mixture evenly into the prepared muffin cups. Aim for about 1-2 tablespoons per cup, depending on the size of your muffin tin. Press down slightly on the top of each cup with the back of your spoon to compact the mixture and help them hold their shape.
- Once all the cups are filled, place the muffin tin in the refrigerator for at least 30 minutes, or until the cups are firm and set. This chilling time is crucial for them to hold their shape when removed from the tin.
- Once firm, carefully remove the No-Bake Peanut Butter Oat Cups from the muffin tin. They are now ready to be enjoyed as a healthy snack!
Notes
Store your No-Bake Peanut Butter Oat Cups in an airtight container in the refrigerator for up to one week. For longer storage, you can freeze the cups. Place them in a single layer on a baking sheet until firm, then transfer them to a freezer-safe bag or container. They will keep in the freezer for up to 3 months. To enjoy from frozen, simply let them thaw at room temperature for about 15-20 minutes. Reheating is generally not recommended as they are best enjoyed chilled or at room temperature.
